The Melon Pieces are the result of a labor intensive picking style in which the farmers cut the pointy tip end and woody stem of each leaf creating indentically sized "melon pieces". Carefully groomed leaves are then pan fired at a slow bake over a charcoal fire and frequently turned to impart a delicate hint of smokiness. This tea is one of the ten famous teas of China and originated in Anhui province in 1776 during the Ching dynasty.About Liu An Gua Pian tea Liu An Gua Pian is grown in Dabie Shan, a mountainous area that has a misty, humid and cloudy climate. This climate contributes to our tea’s superior quality. In the middle of April, fresh tea leaves are usually plucked with only the first, second and third tea leaves chosen. The buds and very tender leaves are removed and sometimes used to make another famous tea, Emerald Eyebrow. Top Liu An Gua Pian and Liu An Gua Pian teas are known for the tenderness of their fresh leaves. To produce our quality Melon Slice tea, tender leaves are plucked in the early Spring. The leaves stems and buds are removed, the buds often used to produce Emerald Eyebrow. Only the first, second and third tea leaves are used to produce our tea. The leaves are withered to reduce leaf moisture and then baked and simultaneously rolled to stop oxidation and give the tea its unique melon seed shape. The tea then goes through several drying processes requiring the skill of an experienced tea master. After drying, the tea is sorted, winnowed to remove broken tea and then graded. Liu’an Gua Pian distinguishes itself from various other types of Green Tea through its contents, as it contains tea leaves without buds and stems. After hand picking one bud with two leaves from the plant, the tea maker removes the bud and any stem from the leaves. These carefully processed leaves, which are even in size and shape, are then pan-fired over low heat in a very small amount (150g) to ensure the highest quality. This creates a tea with shining green leaves covered with white frost. The resulting flavour has a strong aroma and a refreshing and sweet aftertaste, which is rare in Green Tea.
